Vegemite and Bacon Pie Roll

Vegemite is one of the best foodstuff ever created. I love it so much I want to eat it with EVERYTHING.

Anyway, it would seem a prime waste if I didn’t try to create a bake using it … so today, I decided to make a savory snack – Vegemite and Bacon something. A scone seems like the perfect thing to hold these two together … maybe a bun? In the end, I decided on something crusty, like a pie crust.

The result was better than I expected! I love the yeasty saltiness the Vegemite gave, the bits of smoky bacon embedded in the roll and the crusty, biscuity mouthfeel of the roll. The husband – however – doesn’t like it so much. He’s British so  … whatever.

Well, I LOVE IT. And I think it’s the perfect breakfast, the perfect lunch, the perfect afternoon snack, the perfect supper!

2 cups all-purpose flour
2 tsp baking powder
30g butter, chilled and chopped into small cubes
3/4 milk
Bacon, chopped into small bits
Milk to glaze

Note: I did not put a specific amount for Vegemite and bacon because I believe you should be able to put as much as you want.

Heat oven to 200C and put a piece of baking sheet on a tray.

In a large mixing bowl, sift flour and baking powder over the butter cubes. Using a butter knife (something blunt), rub the butter into the flour until you get something resembling breadcrumbs. Make a well and pour the milk in. Stir until the entire mixture forms a soft dough.

Turn out the dough on a floured surface and roll the dough until it is about 20cm by 30cm big. Spread the Vegemite over the surface leaving 1cm on both the long sides untouched. Evenly distribute the bacon over the Vegemited surface. Take one end of the dough and roll it up. Transfer onto the tray, seam-side down.

Using a sharp knife or scissors, cut the dough at regular intervals without cutting all the way through. Brush the surface with milk and bake for 25 minutes or until golden.
