Sea Salt Caramel Chocolate Cake

Who doesn’t love salted caramel? It’s addictive and taste divine with just about … ANYTHING.

I used to think that making caramel was difficult but turns out it isn’t at all. You just need to be patient. Anyway, the original recipe called for 1 cup of mayonnaise actually. However, when I started making the cake, I discovered that the husband had finished ALL the mayo and LEFT THE EMPTY JAR in the refrigerator! So … I substituted the mayo with sour cream and it worked just fine.

Ingredients:

For the cake
2 cups all-purpose flour
1 cup sugar
3 tbsp cocoa powder
2 tsp baking soda
1 cup water
1 cup sour cream
1 tsp vanilla bean paste
1 cup semisweet chocolate chips
2 tbsp espresso
1 tbsp unsalted butter

For the caramel
1/2 cup white sugar
1/8 cup water
1/2 stick butter
1/4 cup heavy cream
1 tsp sea salt

Steps:

For the cake
Prepare a 7-inch loaf tin with baking paper. Set your oven to 175C.

Sift flour and baking soda into a mixing bowl and then mix in sugar and cocoa powder. Set aside.

In a heavy saucepan, melt the butter and then melt the semisweet choc chips in it. Once melted, remove from heat and stir in espresso. Then add water, sour cream and vanilla bean paste and mix everything well together. Fold the dry ingredients into the wet mixture. Once well combined, pour into the loaf tin and level the surface as best as you can. Pop it into the oven and bake for 35 minutes.

For the caramel
In a saucepan, dissolve water and sugar over medium heat. Once the sugar is dissolved, stir in butter and bring to a slow boil. Continue to cook at a low boil until the mixture turns a deep, golden brown color.

Once the mixture turns a copper color, remove from heat and immediately whisk in the heavy cream. Stir the caramel over low heat until you get a smooth consistency,  then sprinkle in the sea salt.

Once the cake is done, take it out of the oven and set it to cool over a wire rack. When the cake is cooled to room temperature, drizzle the caramel over the top. The cake is fudgier after a night in the refrigerator.
