Nutella Meringue Cookies

I’m not a fan of Nutella but many people seem to be. Originally, I thought, “Maybe I’ll make a batch of green tea meringue cookies,” but I think Nutella is a more popular flavour so I went with it just so people will be more open to eating them.

Meringue cookies are insanely easy to make and, best of all, they contain no fat and flour. If you want a treat to satisfy your sweet tooth without dealing with the guilt, meringue cookies may just be the answer.

3 egg whites
A pinch of salt
1/2 cup caster sugar
1/4 cup Nutella

Set your oven to 175C. Whipped the egg whites and salt until you get soft peaks. Then incorporate sugar a little by little, beating until the egg whites achieve stiff, glossy peaks. Then gently fold in the Nutella. Work fast because you don’t want the egg whites to go flat. Scoop out the meringue using a tablespoon onto a tray lined with baking paper.

Pop into the oven and bake for 10 minutes. Then lower the heat to 110C and bake for 1 hour or until meringue cookies feel dry to the touch.

Drizzle with Nutella before serving. Or, you can eat it like I do … spread a layer of Nutella between 2 cookies and have yourself a Nutella Meringue sandwich!!!
