Goma Cupcakes With Matcha Swiss Meringue Buttercream

I’ve been planning to make a black-colored cake for the loooooonnngest time. I mean … BLACK is my favorite color, after all.

So after some research, I discovered that one of the more common ingredients used to make desserts black is goma (black sesame). So at lunch on Sunday at the neighborhood organic vegetarian bistro, I got myself a can of 100% black sesame powder.

Black sesame is apparently a health food. According to the Compedium of Materia Medica, taking black sesame seeds can heal all the chronic illness after 100 days, improve skin tone on body and face after 1 year, reverse gray hair after 2 years, and regrow teeth after 3 years. I’m not sure if it’s really that awesome but I love the smoky, nutty flavor.

To complement its flavor, I decided to look to the Japanese for inspiration and make a matcha (green tea) swiss meringue buttercream. BUT, I know too much green tea can be quite off-putting for many people so I’m did a half-and-half. Half the buttercream is flavored with matcha, the other half is left plain. This makes for a very pretty frosting too as you can see from the main feature image above. Every bite of this cupcake gives you only a hint of green tea so nothing too “grassy”.

Ingredients:

For the cupcake
113g unsalted butter
3/4 cup sugar
1 egg
1 tsp vanilla bean paste
1/4 tsp salt
1 and 1/4 tsp baking powder
1 and 1/4 cup all-purpose flour
1/2 cup of black sesame powder
2/3 cup milk

For the frosting
4 eggs
1 cup sugar
250g butter, cubed and slightly softened
3 tsp of quality green tea powder

Steps:

To make the cupcakes
Heat oven to 175C and line muffin tray with 12 cupcake liners. Cream butter and sugar until the mixture turns pale yellow. Beat in the egg and vanilla bean paste. Separately, sift flour and baking powder into a bowl. Add salt and black sesame powder. Using a hand whisk, stir the dry ingredients until well mixed. Pour half the dry ingredients into the wet mix, pour in half the milk. Mix. Then pour the remaining half of the dry mix into the wet, and pour in remaining milk. Divide mix into the cupcake liners and bake for 18 minutes.

To make the frosting
Follow the steps here to make the swiss meringue buttercream. When done, divide into 2 batches. Mix green tea powder into one batch. Fill one side of your piping bag with plain buttercream, and then the other side with the green tea flavored one. Ice your cupcakes as you please.
