Sausage Plait

Hands up if you are always left with an insane amount of food after a BBQ. Well, here’s a great (and easy!) breakfast you can put together with the leftover sausages you may have after a party. I’m assuming you buy good quality sausages, not the chicken franks sort.

To make this sausage plait, you need puff pastry – the supermarket variety is just fine. Don’t be afraid to get your hands dirty. You can serve this with salad on the side or with some scrambled eggs. This is very good for hangover too!

Ingredients:

4 good quality sausages
4 rashes of streaky bacon
3 cloves of garlic
Dried red chilli flakes
Big handful of fresh cilantro, chopped
2 tbsp butter
Salt and pepper to taste
1 egg, beaten (save 2 tbsp for glaze)
1 puff pastry, chilled

Steps:

Heat oven to 180C.

Remove the casings of the sausages and chop up the garlic. In a large mixing box, combine sausage meat, garlic, cilantro, chilli flakes, butter and egg. Use your hands and mash everything together. On a greased baking parchment, lay out the pastry and arrange the filling in a log shape in the centre with 3cm on both sides. Cover the filling with bacon. Using a knife, make diagonal cuts along both side of the pastry. Fold each strip towards the centre and over the filling, like you’re “braiding” the pastry.

Glaze the top of the pastry with some egg and bake in the oven for 45 minutes or until pastry has turned golden brown.
