Whisky Chocolate Bundt Cake

A friend and I are thinking about taking orders for dessert tables. She specialises in flowers and decorating, while I … well … can bake stuff. We decided to start by doing some “test shoots” first.

We decided to start with the simple, yet popular, theme of Rustic Romance – lots of wooden crates, pastel flowers, strings, etc., and stick to the colour combo of brown and yellow. For this first setup, we went with a lemon meringue pie, lemon thyme loaf cake, vanilla cream cheese cupcakes, chocolate pretzels and a chocolate cake.

I didn’t want to make a normal round cake so decided to make a bundt cake, a whisky chocolate bundt cake to be precise.

After the shoot, we couldn’t help but cut ourselves a slice to try. I love the dense, moist texture, and the deep, malty chocolatey flavour of the cake. I found it to be very festive and appropriate for this time of the year too.

Whisky Chocolate Bundt Cake

Ingredients:

1 cup unsweetened cocoa powder
1 and 1/2 cups brewed espresso
1/2 cup whisky
227g unsalted butter
2 cups castor sugar
2 cups all-purpose flour
1 and 1/4 tsp baking soda
1/2 tsp salt
2 eggs
1 tsp vanilla bean paste

Steps:

Heat oven to 165C. Butter a bundt cake pan and dust the inside with some flour. Heat coffee, whisky, cocoa powder and butter in a big saucepan. When butter is dissolved, add sugar and whisk until dissolved. Transfer this wet mix to a large bowl and allow it to cool.

In a separate bowl, whisk flour, baking soda and salt until well combined. When wet mix is cooled, beat in eggs and vanilla. Then add the dry mix and whisk until well combined. Pour batter into pan and baked for about 50 minutes.

Make a semi-thick frosting of your choice and decorate with almond flakes and cranberries if you wish.

    Ordered this cake as dessert for a Christmas lunch that I hosted. Upon presenting the cake, there were oohs and ahhs around the table, given that the cake looked so grand and festive!

    Tastewise, it was my favourite cake this Christmas season past, rich, dense and velvety crumb with a solid boozy kick at the end. I served it up with some vanilla ice cream and more than one person requested for seconds! A very good cake, perfect for adult parties!

    I ordered Debs’ Whisky Chocolate Bundt cake for my family’s Christmas dinner as it looks pretty festive. The cake was generously sized, deliciously dense and moist with a salted caramel icing on top. Best of all, it wasn’t too sweet and had a smooth kick from the whisky. My folks all enjoyed it although a few commented the whisky might be a little strong. But good for parties IMO!
