Baileys Bundt Cake With Minty White Chocolate Glaze

I love the idea of adding alcohol to cakes and desserts. Hahaha! Perhaps it is THE only way desserts should be eaten – with whisky, Baileys, Cointreau and rum! Anyway, I have a New Year dinner tonight and thought … hell, let’s make an alcoholic-dessert to celebrate the start of a new year!

Since I’m tired of making my Whisky Chocolate Cake, I decided to put my Baileys to use with a Baileys Bundt Cake instead. I remembered seeing mint-flavored Baileys in the DFS as well and figured what would go well with this cake would be a white chocolate mint glaze.

Ingredients:

For the cake
2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 cup caster sugar
3 tbsp espresso powder
1 1/2 tsp baking soda
1 tsp salt
227g butter, melted
1 cup Baileys Irish Cream
3/4 cup sour cream
2 egg

For the glaze
3/4 cup white chocolate buttons
3 tbsp of heavy cream
3 – 4 tbsp of icing sugar
1/2 tsp peppermint oil

Steps:

Heat your oven to 160C. Grease and flour your bundt cake pan. Mix the first 6 dry ingredients in a bowl until well combined. In a separate bowl, mix butter, Baileys and sour cream together. In your stand mixer, beat the eggs until they reach ribbon-stage. Pour the wet mix into the dry mix until the batter is lump-free. Fold the eggs in gently. Pour into the cake tin and bake for 35 – 40 minutes.

Once the cake is ready, cool it for an hour on a wire rack and refrigerate.

Over a double-boiler, heat the cream and melt half the white chocolate buttons in it. Remove from heat and add the remaining half of the white chocolate, stirring until the chocolate is all melted. Stir in the icing sugar and peppermint oil until you achieve a magma-like texture you can pour over the cake. The glaze should set on contact with the chilled cake.

Decorate with dried cranberries, if you want.
