Cointreau Bundt Cake with Nutella Swirls

Okay, so those of you who have been waiting with bated breath as to what the boozy Chinese New Year special is … it’s THIS.

Obviously, with mandarin oranges being THE FRUIT of the season, this would have to be orange-related. So this cake is a Cointreau-soaked work of wonder with Nutella swirls and orange peel bits in it.

Once the cake is baked, a glaze made from orange juice and more Cointreau is brushed over the entire thing. I then soak some long strips of orange peel in the glaze and decorate the top of the cake with them. Sift some icing sugar over the top and it’s ready to eat!

For the cake
227g butter, softened
2 cups sugar
4 eggs
2 and 1/2 cup flour
1 tsp baking soda
3/4 cup milk
Peel of 2 oranges, chopped into small pieces
3 tbsp Cointreau
3 tbsp Nutella

For the glaze
Juice of 2 oranges
5 tbsp Cointreau 4 tbsp sugar
Orange peel, cut into long strips


Heat oven to 175C and prep your bundt tin with butter and flour. Sift the flour and the baking soda in a bowl and set aside. In your stand mixer, beat the butter until it turns pale and creamy, then add sugar slowly, beating for another 5 minutes. Add the eggs in one at a time, beating well at each addition. Stir in the orange peel and Cointreau.

Add the dry mix and the milk in alternate turns. Pour half the batter into your tin. Drop the Nutella in dollops at different parts of the mixture and use a knife to swirl it through. Then cover with the rest of the batter. Bake for 45 minutes or until a stick stuck into the cake comes out clean.

While the cake is baking, boil the juice, Cointreau and sugar in a saucepan. Boil until the mixture is reduced to half its volume. Once cake is done, brush some of the glaze over the cake, leaving roughly two tablespoons in the pot. Soak the peel strips in the glaze. Once cake is cooled, dust some icing sugar over the cake and decorate with the peel strips.
