Mini Orange Bundt Cakes with Cream Cheese Stuffing

These mini orange bundt cakes are very light and fluffy. I cut the original 1 and 1/2 cups sugar needed to just 1 cup cos I didn’t want it to be too sweet. The holds in the cakes are filled with cream cheese and then the whole thing is topped with orange peel frosting. For decorative purposes, I put a strawberry on top of 3 of the cakes.

Eating one of these is bound to put a smile in your face. I intend to create more variants of these delicious babies … so keep a lookout k?
