Kaffir Lime & Leaf Mini Bundt Cakes

When the husband makes a dish, he buys enough ingredients to make the dish like 10 times over. He made tom yum soup for lunch last week and with that, he bought a pack of kaffir lime leaves. With lots of lime leaves left over, I wondered if a dessert can be created with an ingredient typically used to make spicy soups and curries.

I decided to make a batch of citrusy mini bundt cakes with an exotic twist. This recipe doesn’t call for a lot of lime leaves but it’s still a good way to put to use a bunch of herbs in an unconventional way.

For the cakes
50g all-purpose flour
50g almond meal
3/4 tsp baking powderA pinch of salt
2 eggs
85g sugar
125g unsalted butter, softened
Zest of 2 kaffir limes
2 kaffir lime leaves, finely chopped

For the frosting
Whites of 3 eggs
3/4 cup sugar
170g unsalted butter, cut into large chunks and softened slightly
Juice of 1 kaffir lime
2 kaffir lime leaves, finely chopped
Some unsweetened coconut flakes
1 kaffir lime, sliced
1 kaffir leaf, cut into long strips


To make the cakes
Heat your oven to 160C. Grease and flour a 6-bundt cake tin. Mix the flour, almond meal, baking powder and salt. Set aside. Cream butter and sugar until pale yellow and then add eggs in one by one. Add zest and chopped leaves into the wet mix. Mix well. Then add the dry mix. Combine until batter is lump free. Pour batter into the tin and bake for about 15 – 20 minutes, until tester inserted into a cake comes out clean.

To make the frosting
When the cakes are cooling, make your frosting in a Swiss meringue buttercream method. I added a little food coloring to my buttercream. While you’re adding the butter to the whipped egg whites, soak the chopped leaves in the juice. Once you get the buttercream in a texture you want, add the leaves and juice and mix well. Pipe the cream into the hole of each bundt cake and finish with a swirl on top. Decorate with coconut flakes, a slice of lime and a sliver of leaf.
