Gluten-Free Orange & Cranberry Cookies

A couple of friends have been asking if I’d be doing cookies for Chinese New Year. I don’t know why but … I don’t like making cookies. However, for some strange reason today, I felt like making a batch of gluten-free cookies. I’ve got lots of oranges and dried cranberries lying around so I got around making another bake that’s quite suited for the Chinese New Year season.

Replacing flour with unsweetened coconut flakes and almond meal, these cookies are gluten-free. The main cookie itself contains no added sugar – I used raw honey as a sweetener but the glaze does contain icing sugar. Oh well, you know, I’m not aiming to run a health shop here …

The texture is chewy, so if you love those chewy cookies with lots of mouth-feel, you’ll love these cookies.


1 cup almond meal
3/4 cup unsweetened coconut flakes
1/2 tsp baking powder
Zest of 1/3 of an orange
Peel of 1/3 of the same orange, finely diced
1 egg
1/4 cup coconut oil
1/4 cup raw honey
1/2 tsp vanilla bean extract
1/3 cup dried cranberries

Juice of orange (roughly 2 tbsp)
4 heaped tbsp of icing sugar
Peel of 1/3 of the same orange, chopped


Combine in a mixing bowl almond meal, coconut flakes, baking powder, zest and peel of the orange. Mix well and set aside.

Then beat the egg in a mixer until it turns pale and it grows twice in volume. Mix in oil, honey and vanilla paste.

Fold the dry mix into the wet. And then loosely stir in the cranberries. Chill in refrigerator for 30 minutes.

Heat the oven to 180C. Line a tray with baking paper and lightly brush some butter on. Roll a tablespoon of the cookie batter into a ball and place on the tray. Give roughly 2cm of space around the each cookie ball. You should get roughly 14 cookies. Bake for 12 minutes or until cookies turn golden brown.

Cool the cookies in the tray until you can remove them. Cool further on wire rack for another 30 minutes. Mix orange juice with icing sugar and drizzle the glaze over the cookies. Sprinkle remaining orange peel on top of the cookies.

Store in an air-tight container and eat within 3 days.
