Nasi Lemak Cupcakes

This creation is made possible for Stephanie and her husband, Kelvin. I had asked for “weird ingredients” to work with and they offered to let me experiment with this small jar of anchovy paste they had brought back from South Africa. I’ve been dragging my feet over working with this ingredient for a while due to work and I’m glad that I’ve finally gotten round to it.

Orange Meringue Pie

Sunkist oranges were on sale at Cold Storage last week. After the Chocolate Cake with Orange Buttercream, I still had a couple left over so I decided to finish up the remaining oranges by making an orange meringue pie today.

If, like me, you don’t quite like the tartness of lemon meringue pie, this pie will win you over with its sweet, citrusy notes. It tastes like Coffee Bean & Tea Leaf’s Sunrise Ice Blended but in a pie!

Strawberry Cupcakes with Basil Swiss Meringue Buttercream

While everyone seems to be naturally talented at making cupcakes, I struggled with them because I was seriously put off by the frosting. The most common method used for frosting, it seems, was to use LOADS of icing sugar and butter. I hated the idea of ingesting so much sugar and so, whenever I attempted at making frosting, I would skimp on the icing sugar. The result of that? Frosting that was waaaay too soft.

Matcha No-Bake Cheesecake

Last night, I had a dinner gathering at my friend Jolene’s place. It was a potluck dinner so Simon was going to roast a duck. I didn’t want to “fight” with him for use of the oven so I decided to try – finally – a no-bake cheesecake. I got myself a box of premium green tea powder while I was in Taipei a couple of weeks ago so I really wanted to make something using it.

Chocolate Ganache Tart

I’m not a big fan of chocolate but occasionally, when I meet a good chocolate dessert, I like to celebrate it. Recently, at a dinner at Portico, I tasted some really good chocolate ganache. My friend Vanessa, who did a food tasting at the restaurant when it first opened, told me that the ganache is made using chocolate and water. So, I did what every inquisitive individual would do – I asked the chef for the recipe.

Popcorn with Salted Caramel Sand and Crushed Pistachios

I love the idea of a little treat that you can give to friends or pack into your bag for when you feel peckish. I don’t want to pick at roasted nuts or granola (although I admit there are some really interesting artisanal granola mixes out there) so I’ve decided to make my own “gourmet” popcorn mix. Apple Pie with Sea Salt Caramel

I love apple pies but often find them too sweet. This recipe is inspired by Four & Twenty Blackbird’s apple pie where they layer salted caramel between apple slices to give  it a more “adult” taste. The part I enjoy most about making this pie is the caramel – with a little patience, it’s amazingly easy to make your own caramel. Rather than cover the top with a full crust or make a lattice top, I decided to cover the top with round disks of crust instead so it’s … I don’t know … cuter?

Spinach and Chorizo Quiche

I was craving for quiche but I didn’t want to make the expected quiche lorraine. I was given a block of goat’s cheese from Australia and I have been entertaining the idea of making a spinach and goat cheese quiche. However, at the supermarket, I decided I wanted something with a stronger, meatier, more satisfying taste and so I got myself some chorizo sausages for the quiche.
