Ingredients
  

Salad
  • 5 cups mixed greens spinach, arugula, or spring mix
  • 0.5 cup pomegranate seeds
  • 0.5 cup dried cranberries
  • 0.5 cup feta cheese crumbled
  • 0.5 cup pecans toasted
  • 1 small apple diced
  • 1 small pear diced
  • 0.25 cup red onion thinly sliced
Vinaigrette
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • salt to taste
  • black pepper to taste

  • Mixing bowls

Method
 

  1. Rinse and dry mixed greens, place in large salad bowl.
  2. Add pomegranate seeds, dried cranberries, diced apple, diced pear, and crumbled feta.
  3. Toast pecans or walnuts in a skillet for 3–4 minutes, cool slightly, then add to salad.
  4. Thinly slice red onion and add to salad.
  5. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make vinaigrette.
  6. Pour vinaigrette over salad and toss gently.
  7. Adjust seasoning if needed and serve immediately.
