Ingredients
  

Pork
  • 4 lb pork shoulder
  • 2 tsp salt
  • 1.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 onions sliced
  • 4 cloves garlic smashed
  • 3 cups apple cider
  • 1 cup chicken broth
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 2 apples sliced
  • 2 tbsp unsalted butter

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Season pork with salt and pepper.
  3. Sear pork in hot oil until browned on all sides.
  4. Remove pork and sauté onions until softened.
  5. Add garlic and cook briefly.
  6. Deglaze with apple cider and broth.
  7. Add herbs and apples, return pork to pot.
  8. Cover and braise in oven for 3 hours.
  9. Reduce sauce if needed and finish with butter.

Notes

Best served with mashed potatoes or crusty bread.
