Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.67 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
Apple Crisp Topping
  • 3 apples peeled, cored, sliced
  • 0.33 cup brown sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp nutmeg
  • 0.5 cup rolled oats
  • 0.25 cup all-purpose flour
  • 0.25 cup unsalted butter softened

Method
 

  1. Preheat oven to 350°F (175°C). Grease 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake 8–10 minutes.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time and vanilla. Pour over crust.
  4. Toss apple slices with brown sugar, cinnamon, and nutmeg. Prepare oat crumble with oats, flour, and butter.
  5. Layer apples over cheesecake. Sprinkle crumble topping.
  6. Bake 35–40 minutes until set and topping golden. Cool, then refrigerate 2 hours before serving.
