Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
Cheesecake Filling
  • 24 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
Apple Topping
  • 2 medium apples peeled, cored, thinly sliced
  • 2 tbsp brown sugar
  • 0.5 tsp cinnamon
  • 1 tbsp lemon juice
Crumble Topping
  • 0.5 cup all-purpose flour
  • 0.5 cup rolled oats
  • 0.25 cup brown sugar
  • 4 tbsp unsalted butter cold, cubed
  • 0.25 tsp cinnamon
  • pinch salt

Equipment

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Prepare crust: combine crumbs, sugar, melted butter; press into pan; bake 8–10 min.
  3. Prepare filling: beat cream cheese with sugar; add eggs one at a time; mix in vanilla, sour cream, cinnamon, nutmeg.
  4. Pour filling over cooled crust.
  5. Prepare apple topping: toss slices with brown sugar, cinnamon, lemon juice; arrange on cheesecake.
  6. Prepare crumble: combine flour, oats, sugar, cinnamon, salt; cut in butter; sprinkle over apples.
  7. Bake 55–65 min; turn off oven, leave door slightly open 30 min.
  8. Cool completely; refrigerate at least 4 hours. Slice and serve.

Notes

Store refrigerated up to 3 days. Optional caramel drizzle before serving.
