Ingredients
  

Bacon Jam
  • 1 lb thick-cut bacon chopped
  • 1 cup yellow onion diced
  • 2 apples peeled and diced
  • 2 cloves garlic minced
  • 0.5 cup brown sugar
  • 2 tbsp maple syrup optional
  • 0.25 cup whiskey
  • 2 tbsp apple cider vinegar
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper optional

Equipment

  • Heavy skillet or saucepan
  • Slotted spoon
  • Wooden spoon

Method
 

  1. Cook bacon until crisp and remove from pan.
  2. Caramelize onions in rendered bacon fat.
  3. Add garlic and cook briefly.
  4. Stir in apples, sugar, and maple syrup.
  5. Deglaze with whiskey and simmer.
  6. Add vinegar, spices, and bacon.
  7. Simmer until thick and jam-like.

Notes

Blend slightly if smoother texture is desired.
