Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil divided
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp chili powder
  • 0.5 tsp garlic powder
  • salt to taste
  • black pepper to taste
Garlic Spinach
  • 4 cups fresh spinach
  • 3 cloves garlic thinly sliced
  • 0.5 lemon juiced

Method
 

  1. Pat chicken breasts dry and rub with 1 tablespoon olive oil.
  2. Season chicken evenly with smoked paprika, cumin, oregano, chili powder, garlic powder, salt, and pepper.
  3. Heat a skillet over medium-high heat and cook chicken 6–7 minutes per side until golden and fully cooked.
  4. Remove chicken from skillet and let rest for 5 minutes.
  5. Add remaining olive oil to the skillet and sauté garlic for 30 seconds until fragrant.
  6. Add spinach in batches and cook until wilted, about 2–3 minutes.
  7. Season spinach lightly with salt and finish with lemon juice.
  8. Slice chicken and serve with sautéed garlic spinach.

Notes

Use smoked paprika for authentic asado flavor and let chicken rest before slicing.
