Ingredients
  

Curry Base
  • 2 lbs beef chuck cubed
  • 2 tbsp vegetable oil
  • 1 onion large, chopped
  • 4 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 cup crushed tomatoes
  • 1 cup beef broth
  • 2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tbsp ground coriander
  • 2 tsp ground cumin
  • 1-2 tsp red chili powder adjust to taste
  • 1 tsp garam masala

Equipment

  • Large heavy-bottomed pot
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Heat oil and toast mustard and cumin seeds until fragrant.
  2. Cook onions until golden, then add garlic and ginger.
  3. Add spices and tomatoes, stirring well.
  4. Add beef and broth, simmer 75-90 minutes until tender.
  5. Finish with garam masala and serve hot.

Notes

Adjust spice level according to preference. Tastes better the next day.
