Ingredients
  

Cod
  • 4 cod fillets
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Coconut Lemon Cream Sauce
  • 1 cup coconut milk full-fat
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tsp lemon zest

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season cod and place in baking dish.
  3. Simmer coconut milk with garlic and lemon.
  4. Pour sauce over cod and bake 15–18 minutes.
  5. Garnish with parsley and serve warm.

Notes

Do not overcook cod to maintain flaky texture.
