Baked Feta Butternut Squash Pasta

Ingredients
  

  • 4 cups butternut squash cubed
  • 1 block feta cheese full-fat
  • 12 oz pasta
  • 3 tbsp olive oil
  • 3 cloves garlic

Equipment

  • Baking dish
  • Large pot
  • Wooden spoon

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place squash, feta, garlic, olive oil, and seasoning in baking dish.
  3. Bake until squash is tender and feta is soft.
  4. Cook pasta and reserve pasta water.
  5. Mash baked feta and squash, then mix with pasta and pasta water.

Notes

Add greens or nuts for variation.
