Ingredients
  

Baked Eggs
  • 4 eggs large
  • 7 oz feta cheese block
  • 1 cup cherry tomatoes
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 0.5 tsp dried oregano
  • 0.25 tsp red pepper flakes optional
Seasoning
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley or basil chopped

  • Mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place feta cheese in the center of a small baking dish.
  3. Arrange cherry tomatoes around the feta cheese.
  4. Add minced garlic and drizzle with olive oil.
  5. Sprinkle oregano, red pepper flakes, salt, and pepper.
  6. Bake for 10 minutes until tomatoes soften.
  7. Remove from oven and create spaces for eggs.
  8. Crack eggs into the dish around the feta.
  9. Bake another 8-10 minutes until egg whites are set.
  10. Top with fresh herbs and serve with toasted bread.

Notes

Add olives, spinach, or roasted peppers for extra Mediterranean flavor.
