Ingredients
  

Potatoes
  • 1.5 lbs baby potatoes halved
  • 4 oz feta cheese crumbled
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley chopped, optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and halve the baby potatoes. Pat dry thoroughly.
  3. In a large bowl, mix olive oil, minced garlic, paprika, thyme, salt, and black pepper.
  4. Toss potatoes in the seasoning mixture until evenly coated.
  5. Spread potatoes cut-side down on the baking sheet.
  6. Sprinkle crumbled feta evenly over the potatoes.
  7. Roast for 25–30 minutes until golden and tender. Optional: broil 2–3 minutes for extra crispiness.
  8. Garnish with fresh parsley and serve warm.

Notes

Leftovers store well in the fridge up to 3 days. Reheat in oven for best crispiness.
