Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash and halve the baby potatoes. Pat dry thoroughly.
- In a large bowl, mix olive oil, minced garlic, paprika, thyme, salt, and black pepper.
- Toss potatoes in the seasoning mixture until evenly coated.
- Spread potatoes cut-side down on the baking sheet.
- Sprinkle crumbled feta evenly over the potatoes.
- Roast for 25–30 minutes until golden and tender. Optional: broil 2–3 minutes for extra crispiness.
- Garnish with fresh parsley and serve warm.
Notes
Leftovers store well in the fridge up to 3 days. Reheat in oven for best crispiness.
