Ingredients
  

Salmon Balls
  • 1 lb fresh salmon fillet skin removed
  • 1 egg large
  • 0.5 cup breadcrumbs
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
Avocado Sauce
  • 1 ripe avocado
  • 0.5 cup Greek yogurt
  • 1 clove garlic
  • 1 tbsp lemon juice

Equipment

  • Mixing bowls

  • Food processor or blender

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Finely chop the salmon and place in a mixing bowl.
  3. Add egg, breadcrumbs, garlic, herbs, lemon zest, lemon juice, olive oil, and seasoning.
  4. Mix gently and form into balls.
  5. Bake for 14–18 minutes, flipping halfway, until golden.
  6. Blend avocado sauce ingredients until smooth.
  7. Serve salmon balls warm with avocado sauce.

Notes

Best served fresh. Sauce can be adjusted for thickness with water.
