Ingredients
  

Salmon
  • 4 salmon fillets about 6 oz each
  • 2 tbsp olive oil divided
  • 2 cloves garlic minced
  • 3 cups fresh spinach
  • 0.75 cup feta cheese crumbled
  • 1 lemon zested and juiced

Method
 

  1. Sauté garlic and spinach until wilted.
  2. Mix spinach with feta and seasonings.
  3. Cut pockets into salmon fillets.
  4. Stuff salmon and place on baking sheet.
  5. Bake until salmon flakes easily.

Notes

Do not overbake to keep salmon moist.
