Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup mashed banana ripe
Cream Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream or milk as needed

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F and line baking sheets.
  2. Whisk dry ingredients together.
  3. Cream butter and sugar, then add egg and vanilla.
  4. Mix in mashed banana.
  5. Combine dry and wet ingredients.
  6. Scoop onto baking sheet and bake 10-12 minutes.
  7. Cool completely.
  8. Beat filling ingredients and sandwich cookies together.

Notes

For stronger banana flavor, add banana extract or instant banana pudding mix to filling.
