Ingredients
  

Bread Pudding Base
  • 8 cups brioche or French bread cubes
  • 3 ripe bananas sliced
  • 4 eggs large
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
Bananas Foster Sauce
  • 0.5 cup unsalted butter
  • 1 cup brown sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 cup dark rum optional
  • 0.5 cup heavy cream
  • 2 bananas sliced

Equipment

  • 9x13 baking dish
  • Mixing bowls

Method
 

  1. Preheat oven and prepare baking dish.
  2. Layer bread and bananas in dish.
  3. Whisk custard ingredients and pour over bread.
  4. Let soak 20 minutes.
  5. Bake 40–45 minutes until set.
  6. Prepare caramel sauce in saucepan.
  7. Add bananas to sauce and cook briefly.
  8. Pour sauce over warm pudding before serving.

Notes

Serve warm with vanilla ice cream for extra indulgence.
