Bang-Bang Melty Bacon Cheddar Stuffed Meatloaf Bombs

Ingredients
  

Meat Mixture
  • 1.5 lbs ground beef 80/20 recommended
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 0.25 cup milk
  • 0.5 onion finely minced
  • 2 cloves garlic minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Filling
  • 6 oz sharp cheddar cheese cut into cubes
Wrap
  • 8-10 slices bacon
Bang-Bang Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey
  • 1 tsp rice vinegar

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper.
  2. Combine ground beef, breadcrumbs, egg, milk, onion, garlic, ketchup, Worcestershire sauce, smoked paprika, salt, and pepper.
  3. Divide mixture into 8 portions.
  4. Flatten portion, place cheddar cube in center, seal and roll into ball.
  5. Wrap each ball with bacon and place seam-side down.
  6. Whisk bang-bang sauce ingredients together.
  7. Brush half sauce over bombs and bake 25-30 minutes until internal temp reaches 160°F.
  8. Brush remaining sauce during final 5 minutes. Rest before serving.

Notes

Chill before baking for best shape retention. Broil briefly for crispier bacon. Store refrigerated up to 4 days.
