Ingredients
  

Bavarian Cream
  • 1.5 cups whole milk
  • 3 egg yolks
  • 0.5 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 tsp unflavored gelatin bloomed
  • 1 cup heavy cream whipped
Berries
  • 2 cups mixed berries

Method
 

  1. Bloom gelatin in cold water.
  2. Heat milk with vanilla until steaming.
  3. Whisk egg yolks and sugar until pale.
  4. Temper milk into yolks and cook gently.
  5. Remove from heat and dissolve gelatin.
  6. Fold in whipped cream and chill.
  7. Layer with berries and serve.

Notes

Do not boil custard to prevent curdling.
