- Bloom gelatin in cold water.
- Heat milk with vanilla until steaming.
- Whisk egg yolks and sugar until pale.
- Temper milk into yolks and cook gently.
- Remove from heat and dissolve gelatin.
- Fold in whipped cream and chill.
- Layer with berries and serve.
Notes
Do not boil custard to prevent curdling.
