Ingredients
  

Beef and Marinade
  • 1 pound beef sirloin or flank steak thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
Udon and Vegetables
  • 2 packs fresh udon noodles
  • 1 red bell pepper sliced
  • 1 small onion sliced
  • 2 green onions chopped
  • 3 cloves garlic minced
Black Pepper Sauce
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 0.5 cup beef broth
  • 2 tsp freshly cracked black pepper
  • 1 tsp cornstarch
For Cooking
  • 2 tbsp vegetable oil
  • sesame seeds for garnish

Equipment

  • Large skillet or wok
  • Mixing bowls
  • Pot for noodles
  • Tongs or spatula

Method
 

  1. Combine beef with soy sauce, cornstarch, and sesame oil. Marinate for 10 minutes.
  2. Whisk together all sauce ingredients in a bowl.
  3. Cook udon noodles according to package instructions and drain.
  4. Heat oil in a wok or skillet over high heat.
  5. Stir fry beef for 2-3 minutes until browned, then remove from pan.
  6. Cook onion and bell pepper for 3-4 minutes until slightly tender.
  7. Add garlic and cook until fragrant.
  8. Return beef to pan with udon noodles.
  9. Pour sauce over noodles and toss until glossy and coated.
  10. Garnish with green onions and sesame seeds before serving.

Notes

Use freshly cracked black pepper for the boldest flavor. Fresh or frozen udon noodles provide the best chewy texture.
