Ingredients
  

Chicken
  • 1.5 lbs chicken breast or thighs cut into pieces
  • 1 tbsp olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 1 tsp salt adjust to taste
  • 14 oz coconut milk full fat
  • 0.5 cup chicken broth
  • 1 lime juiced

Method
 

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and sauté until soft.
  3. Stir in garlic and cook until fragrant.
  4. Add chicken pieces and season with spices.
  5. Cook chicken until lightly browned.
  6. Pour in coconut milk and chicken broth.
  7. Simmer gently until sauce thickens.
  8. Finish with lime juice and serve.
