Method
- Season chicken breasts with salt and black pepper.
- Heat olive oil in a skillet and sear chicken 6–7 minutes per side until cooked through. Remove and set aside.
- Add butter to skillet and sauté shallot until softened.
- Add garlic and cook briefly until fragrant.
- Stir in blueberries, chicken broth, balsamic vinegar, and honey. Bring to a simmer.
- Simmer sauce until blueberries burst and sauce thickens, about 6–8 minutes.
- Stir in fresh thyme and return chicken to pan, spooning sauce over top.
- Simmer 2 minutes and serve warm.
Notes
Fresh blueberries provide the best texture and flavor.
