Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts
  • salt to taste
  • black pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp butter
Blueberry Thyme Sauce
  • 1.5 cups fresh blueberries
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • 0.5 cup chicken broth low sodium
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves

Method
 

  1. Season chicken breasts with salt and black pepper.
  2. Heat olive oil in a skillet and sear chicken 6–7 minutes per side until cooked through. Remove and set aside.
  3. Add butter to skillet and sauté shallot until softened.
  4. Add garlic and cook briefly until fragrant.
  5. Stir in blueberries, chicken broth, balsamic vinegar, and honey. Bring to a simmer.
  6. Simmer sauce until blueberries burst and sauce thickens, about 6–8 minutes.
  7. Stir in fresh thyme and return chicken to pan, spooning sauce over top.
  8. Simmer 2 minutes and serve warm.

Notes

Fresh blueberries provide the best texture and flavor.
