Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 1.5 cups fresh blueberries
  • 2 tsp fresh thyme leaves
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 0.5 cup chicken broth
  • 1 tbsp lemon juice
  • salt to taste
  • black pepper to taste

Method
 

  1. Pat chicken dry and season with salt and pepper.
  2. Heat olive oil and butter in skillet over medium-high heat.
  3. Sear chicken 5-6 minutes per side until golden and cooked through. Remove and set aside.
  4. Sauté garlic until fragrant.
  5. Add blueberries, honey, balsamic vinegar, broth, thyme, and lemon juice. Simmer 5-7 minutes.
  6. Return chicken to pan and spoon sauce over. Cook until slightly thickened.
  7. Garnish with thyme and serve warm.

Notes

Serve with mashed potatoes or rice to soak up the sauce. Fresh thyme enhances the aroma significantly.
