Method
- Pat chicken dry and season with salt and pepper.
- Heat olive oil and butter in skillet over medium-high heat.
- Sear chicken 5-6 minutes per side until golden and cooked through. Remove and set aside.
- Sauté garlic until fragrant.
- Add blueberries, honey, balsamic vinegar, broth, thyme, and lemon juice. Simmer 5-7 minutes.
- Return chicken to pan and spoon sauce over. Cook until slightly thickened.
- Garnish with thyme and serve warm.
Notes
Serve with mashed potatoes or rice to soak up the sauce. Fresh thyme enhances the aroma significantly.
