Ingredients
  

Chicken Soup
  • 2 lb bone-in chicken
  • 1 onion diced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 3 cloves garlic minced
  • 2 bay leaves
  • 1 tbsp olive oil
  • 8 cups water or broth
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large pot
  • Knife
  • Cutting board

Method
 

  1. Sauté vegetables in olive oil until softened.
  2. Add garlic and cook briefly.
  3. Add chicken and liquid to the pot.
  4. Season and bring to a gentle simmer.
  5. Simmer uncovered for 45–60 minutes.
  6. Remove chicken, shred, and return to pot.
  7. Adjust seasoning and serve.
