Ingredients
  

Macaron Shells
  • 0.75 cup almond flour
  • 0.25 cup ground pistachios unsalted
  • 1 cup powdered sugar
  • 2 egg whites room temperature
Pistachio Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 2 tbsp pistachio paste

Equipment

  • Stand mixer or hand mixer
  • Piping bag with round tip
  • Baking sheets

Method
 

  1. Sift dry ingredients together.
  2. Whip egg whites with sugar to stiff peaks.
  3. Fold dry ingredients into meringue.
  4. Pipe macaron shells and rest.
  5. Bake until set and cool completely.
  6. Prepare pistachio buttercream.
  7. Assemble macarons and chill before serving.

Notes

Macarons improve after resting overnight in the fridge.
