Method
- Beat softened butter until creamy and smooth.
- Gradually mix in powdered sugar until light and fluffy.
- Add blueberry jam, vanilla extract, and cream and mix until smooth.
- Chill buttercream mixture for 20 minutes.
- Roll small balls of buttercream and place on a parchment-lined tray.
- Freeze the filling balls for 30 minutes.
- Melt chocolate chips with coconut oil until smooth.
- Dip each frozen buttercream ball into melted chocolate.
- Place coated chocolates on parchment paper and allow to set.
- Decorate with optional toppings before chocolate hardens.
Notes
For stronger berry flavor add a small amount of freeze-dried blueberry powder to the buttercream filling.
