Ingredients
  

Blueberry Buttercream Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 2 tbsp blueberry jam or puree
  • 0.5 tsp vanilla extract
  • 1 tbsp heavy cream
Chocolate Coating
  • 2 cups semi-sweet chocolate chips
  • 1 tsp coconut oil

Equipment

  • Mixing bowl
  • Hand mixer or stand mixer
  • Baking tray
  • Parchment paper

Method
 

  1. Beat softened butter until creamy and smooth.
  2. Gradually mix in powdered sugar until light and fluffy.
  3. Add blueberry jam, vanilla extract, and cream and mix until smooth.
  4. Chill buttercream mixture for 20 minutes.
  5. Roll small balls of buttercream and place on a parchment-lined tray.
  6. Freeze the filling balls for 30 minutes.
  7. Melt chocolate chips with coconut oil until smooth.
  8. Dip each frozen buttercream ball into melted chocolate.
  9. Place coated chocolates on parchment paper and allow to set.
  10. Decorate with optional toppings before chocolate hardens.

Notes

For stronger berry flavor add a small amount of freeze-dried blueberry powder to the buttercream filling.
