Ingredients
  

Snack Mix
  • 8 cups rice cereal squares
  • 1.5 cups white chocolate chips
  • 4 oz cream cheese softened
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 0.5 cup freeze-dried blueberries crushed
  • 1.5 cups powdered sugar

Method
 

  1. Place cereal into a large mixing bowl.
  2. Melt white chocolate, cream cheese, and butter until smooth.
  3. Stir in vanilla, lemon zest, and lemon juice.
  4. Pour mixture over cereal and gently fold to coat.
  5. Add freeze-dried blueberries and mix lightly.
  6. Transfer to bag with powdered sugar and shake to coat.
  7. Spread out to set before serving.

Notes

Use freeze-dried blueberries only to avoid moisture. Store in an airtight container at room temperature.
