Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix dry ingredients. Cream butter and sugar, add eggs and vanilla.
- Combine wet and dry ingredients. Scoop and bake 10-12 minutes.
- Heat milk. Whisk yolks, sugar, and cornstarch. Combine and cook until thick.
- Cool custard completely.
- Heat cream and pour over chocolate. Stir until smooth.
- Fill cookies with custard and top with ganache.
Notes
Chill custard fully before assembling. Store cookies refrigerated.
