Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 1.5 tsp vanilla extract
  • 2 tbsp milk
Filling
  • 2 cups whole milk
  • 0.5 cup granulated sugar
  • 3 egg yolks
  • 3 tbsp cornstarch
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
Topping
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy cream

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix dry ingredients. Cream butter and sugar, add eggs and vanilla.
  3. Combine wet and dry ingredients. Scoop and bake 10-12 minutes.
  4. Heat milk. Whisk yolks, sugar, and cornstarch. Combine and cook until thick.
  5. Cool custard completely.
  6. Heat cream and pour over chocolate. Stir until smooth.
  7. Fill cookies with custard and top with ganache.

Notes

Chill custard fully before assembling. Store cookies refrigerated.
