Ingredients
  

Cake Batter
  • 3 carrots peeled and chopped
  • 3 eggs large
  • 1 cup vegetable oil
  • 1.5 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
Chocolate Glaze
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup granulated sugar
  • 2 tbsp butter
  • 0.33 cup milk
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. Blend carrots, eggs, oil, and sugar until smooth.
  3. Pour mixture into a bowl and add flour, baking powder, and salt.
  4. Mix gently until smooth batter forms.
  5. Pour batter into prepared pan.
  6. Bake for 35–40 minutes until a toothpick inserted comes out clean.
  7. Combine cocoa powder, sugar, butter, and milk in a saucepan.
  8. Cook while stirring until glaze thickens slightly.
  9. Remove from heat and stir in vanilla extract.
  10. Pour glaze over warm cake and allow to set before slicing.

Notes

Serve slightly warm for best flavor. This cake pairs perfectly with coffee or milk.
