Ingredients
  

Soup Base
  • 3 cups broccoli florets chopped
  • 2 cups potatoes peeled and diced
  • 1.5 cups cheddar cheese shredded

Equipment

  • Large pot
  • Wooden spoon
  • Whisk
  • Knife and cutting board

Method
 

  1. Melt butter and sauté onion and garlic until soft.
  2. Stir in flour to form a roux.
  3. Add broth and potatoes and simmer until tender.
  4. Add broccoli and cook until soft.
  5. Stir in milk and cheese until creamy.

Notes

Blend partially for a smoother texture if desired.
