Ingredients
  

Chicken
  • 4 boneless chicken thighs or breasts
  • 2 tsp Cajun seasoning
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth

Equipment

  • Large skillet with lid
  • Wooden spoon

Method
 

  1. Season and sear chicken until golden.
  2. Sauté vegetables and garlic in the same pan.
  3. Toast rice and add broth and seasonings.
  4. Return chicken to pan and simmer until rice is tender.

Notes

Adjust spice level to taste. Great for meal prep.
