Ingredients
  

Pasta
  • 300 g elbow macaroni
Chicken
  • 2 chicken breasts cut into pieces
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
Cheese Sauce
  • 2 tbsp butter
  • 3 tbsp flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese
  • 0.5 cup parmesan cheese
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.25 tsp cayenne pepper optional
  • parsley for garnish

Equipment

Method
 

  1. Cook macaroni until al dente and set aside.
  2. Season and cook chicken until done, then remove.
  3. Make a roux with butter and flour.
  4. Add milk and cream, whisking until thick.
  5. Stir in cheeses until melted.
  6. Add spices and mix well.
  7. Combine pasta and chicken with sauce.
  8. Optional: bake with extra cheese on top.
  9. Garnish and serve warm.

Notes

For extra flavor, add bell peppers or use smoked sausage along with chicken.
