Ingredients
  

Main
  • 2 cups chicken cooked and shredded
  • 2 cans white beans drained and rinsed
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp Cajun seasoning
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 green chili diced
  • salt to taste
  • black pepper to taste
  • 2 tbsp cilantro optional

Equipment

  • Large pot
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Heat olive oil and sauté onion until soft.
  2. Add garlic and cook briefly.
  3. Stir in spices and cook until fragrant.
  4. Add broth and bring to simmer.
  5. Add chicken, beans, and chili.
  6. Simmer for 15-20 minutes.
  7. Stir in cream and cook 5 minutes.
  8. Season and garnish before serving.

Notes

Mash some beans for thicker consistency. Adjust spice level to taste.
