Ingredients
  

Pasta
  • 12 oz pasta fettuccine or penne
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 leeks sliced
  • 2 cups mushrooms sliced
  • 3 cloves garlic minced
  • 0.5 cup heavy cream
  • 0.5 cup gruyere cheese grated
  • 0.25 cup parmesan cheese
  • 0.5 tsp thyme
  • salt and pepper to taste
  • 0.25 cup pasta water reserved

Equipment

  • Large pot
  • Skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta and reserve water.
  2. Sauté leeks until caramelized.
  3. Add mushrooms and cook until browned.
  4. Add garlic and cook briefly.
  5. Stir in cream and cheeses.
  6. Add pasta and toss.
  7. Adjust with pasta water.
  8. Season and serve warm.

Notes

Use freshly grated cheese for best texture and flavor.
