Ingredients
  

Pasta
  • 12 oz pasta
Sauce
  • 4 large yellow onions thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 0.75 cup heavy cream
  • 0.75 cup Parmesan cheese grated
  • 0.5 cup pasta water reserved
  • 1 tsp salt to taste
  • 0.5 tsp black pepper

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Heat butter and olive oil in skillet over medium heat.
  3. Add sliced onions and salt. Cook 30-40 minutes until deeply caramelized.
  4. Add garlic and cook until fragrant.
  5. Stir in cream and simmer briefly.
  6. Toss pasta with sauce, Parmesan, and pasta water.
  7. Season and garnish before serving.

Notes

For extra flavor, add thyme or a splash of white wine while deglazing the pan. Best served fresh.
