- Cook pasta in salted water until al dente. Reserve pasta water and drain.
- Heat butter and olive oil in skillet over medium heat.
- Add sliced onions and salt. Cook 30-40 minutes until deeply caramelized.
- Add garlic and cook until fragrant.
- Stir in cream and simmer briefly.
- Toss pasta with sauce, Parmesan, and pasta water.
- Season and garnish before serving.
Notes
For extra flavor, add thyme or a splash of white wine while deglazing the pan. Best served fresh.
