- Preheat oven to 350°F (175°C) and grease a baking dish.
- Core apples and brush inside with lemon juice and cinnamon.
- Beat cream cheese, sugar, vanilla, egg yolk, and sour cream until smooth.
- Fill apples with cheesecake mixture.
- Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter.
- Top apples with graham cracker mixture.
- Bake 30–35 minutes until apples are tender and topping is golden.
