Ingredients
  

Apples
  • 6 large baking apples
  • 1 tbsp lemon juice
  • 0.5 tsp cinnamon
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.33 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 2 tbsp sour cream
Graham Cracker Topping
  • 0.75 cup graham cracker crumbs
  • 0.25 cup brown sugar
  • 0.25 tsp cinnamon
  • 4 tbsp unsalted butter melted

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Core apples and brush inside with lemon juice and cinnamon.
  3. Beat cream cheese, sugar, vanilla, egg yolk, and sour cream until smooth.
  4. Fill apples with cheesecake mixture.
  5. Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter.
  6. Top apples with graham cracker mixture.
  7. Bake 30–35 minutes until apples are tender and topping is golden.

Notes

Serve warm with optional honey or caramel drizzle.
