Cheesy BBQ Bacon Beef Cornbread Casserole

Ingredients
  

Beef & BBQ Layer
  • 1 lb ground beef
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup BBQ sauce
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Bacon & Cheese Layer
  • 8 strips bacon (cooked and crumbled)
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
Cornbread Topping
  • 1 box cornbread mix
  • 1 egg large
  • 0.33 cup milk
  • 2 tbsp butter (melted)
  • 0.5 cup corn kernels optional

Equipment

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13 baking dish.
  2. Cook ground beef in a skillet until browned. Add onion and garlic and cook until soft.
  3. Stir in BBQ sauce, smoked paprika, salt, and pepper. Simmer for 3–5 minutes.
  4. Mix half the crumbled bacon into the beef mixture.
  5. Spread beef mixture into baking dish and top with cheddar and mozzarella cheese.
  6. Mix cornbread batter ingredients until just combined.
  7. Spread cornbread batter over cheese layer evenly.
  8. Bake for 25–30 minutes until golden and cooked through.
  9. Add remaining bacon on top and bake for 5 more minutes.
  10. Rest 10 minutes before serving.

Notes

Best served warm. Flavors deepen after resting. Can be refrigerated for up to 4 days.
