Ingredients
  

Main Base
  • 12 oz pasta (penne or rotini)
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
Sauce & Seasoning
  • 1 packet taco seasoning
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 1 can red enchilada sauce 15 oz
  • 1 can diced tomatoes with green chilies 10 oz
  • 1 cup beef broth
Cheese & Finish
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup sour cream optional

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a baking dish.
  2. Cook pasta until al dente, then drain and set aside.
  3. Brown ground beef in a skillet, then drain excess fat.
  4. Add onion and garlic, cooking until softened.
  5. Stir in seasonings, enchilada sauce, tomatoes, and beef broth. Simmer.
  6. Combine pasta with sauce mixture and stir well.
  7. Mix in sour cream if using.
  8. Transfer to baking dish and top with cheese.
  9. Bake for 20–25 minutes until bubbly and melted.
  10. Broil briefly for a golden cheese top and serve hot.

Notes

Let rest before serving for better texture. Adjust spice level with jalapeños or hot enchilada sauce.
