- Preheat oven to 375°F (190°C) and prepare a baking dish.
- Cook pasta until al dente, then drain and set aside.
- Brown ground beef in a skillet, then drain excess fat.
- Add onion and garlic, cooking until softened.
- Stir in seasonings, enchilada sauce, tomatoes, and beef broth. Simmer.
- Combine pasta with sauce mixture and stir well.
- Mix in sour cream if using.
- Transfer to baking dish and top with cheese.
- Bake for 20–25 minutes until bubbly and melted.
- Broil briefly for a golden cheese top and serve hot.
