Ingredients
  

Potatoes
  • 4 russet potatoes
  • 1 tbsp olive oil
  • salt for skin
Buffalo Chicken
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
Toppings
  • 1.5 cups shredded cheddar cheese
  • 1/2 cup sour cream or ranch
  • 2 green onions, chopped
  • blue cheese crumbles optional

Equipment

Method
 

  1. Bake potatoes at 425°F (220°C) until soft inside.
  2. Mix shredded chicken with buffalo sauce and spices in a skillet.
  3. Slice potatoes open and fluff inside.
  4. Fill potatoes with buffalo chicken mixture.
  5. Top with cheddar cheese and bake until melted.
  6. Add sour cream or ranch and garnish with green onions.

Notes

Best served hot when cheese is melted and potatoes are fluffy.
