- Bake potatoes at 425°F (220°C) until soft inside.
- Mix shredded chicken with buffalo sauce and spices in a skillet.
- Slice potatoes open and fluff inside.
- Fill potatoes with buffalo chicken mixture.
- Top with cheddar cheese and bake until melted.
- Add sour cream or ranch and garnish with green onions.
