Ingredients
  

Chicken and Marinade
  • 1.5 pounds boneless skinless chicken thighs or breasts cut into chunks
  • 0.25 cup soy sauce
  • 2 tbsp gochujang
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp vegetable oil
  • 1 tbsp sesame seeds for garnish
  • 2 green onions sliced

Equipment

  • Mixing bowl

Method
 

  1. Soak wooden skewers if using.
  2. Whisk soy sauce, gochujang, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger.
  3. Reserve some marinade for basting.
  4. Marinate chicken for at least 30 minutes.
  5. Thread chicken onto skewers.
  6. Grill 4-5 minutes per side until cooked through.
  7. Brush with reserved marinade while grilling.
  8. Rest 5 minutes and garnish before serving.

Notes

For extra caramelization, broil skewers briefly after baking. Chicken is done when internal temperature reaches 165°F.
