Method
- Soak wooden skewers if using.
- Whisk soy sauce, gochujang, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger.
- Reserve some marinade for basting.
- Marinate chicken for at least 30 minutes.
- Thread chicken onto skewers.
- Grill 4-5 minutes per side until cooked through.
- Brush with reserved marinade while grilling.
- Rest 5 minutes and garnish before serving.
Notes
For extra caramelization, broil skewers briefly after baking. Chicken is done when internal temperature reaches 165°F.
